Smothered Herb Lamb Chops with Creamy Mashed Potatoes and Garlic Roasted Asparagus
This recipe will always remind me of the early days of my marriage. I didn’t grow up eating lamb, so when my husband asked for it, I honestly had no idea where to start. I tried following other recipes, but nothing felt quite right. Then one day, I stopped trying to copy anyone else. I walked into my kitchen, took a deep breath, and cooked from the heart. I seasoned and smothered the lamb in a way that felt natural to me, let it simmer slowly, and waited. That moment became the beginning of this family favorite. Today, after 20 years of marriage, our five children love it just as much as he does. In so many ways, this dish reminds me of marriage itself. The beginning can be uncertain and unfamiliar, but with patience and a whole lot of love, something beautiful grows. Every time I make it, I’m reminded that the sweetest things in life are built over time: one loving meal, one shared table, one season at a time. With love, Mama Niquey
Ingredients
8 lamb chops
2 tablespoons olive oil
2 teaspoons onion powder
2 teaspoons garlic powder
1 teaspoon dried thyme
1 teaspoon dried parsley
1 teaspoon dried oregano
½ teaspoon dried sage
Salt and freshly ground pepper to taste
2 large onions, sliced
3 bell peppers (red, yellow, and green), sliced
8 cloves fresh garlic, roughly chopped
1 to 1½ cups water
For the Creamy Mashed Potatoes
5 to 6 large russet potatoes, peeled and quartered
1 quart heavy cream
2 sticks salted butter

Salt to taste
Additional butter or milk if needed
For the Garlic Roasted Asparagus
2 bunches fresh asparagus
3 to 4 cloves fresh garlic, sliced
2 to 3 tablespoons olive oil
Salt and freshly ground pepper
Instructions
Season the lamb: Pat the chops dry, then season both sides with onion powder, garlic powder, thyme, parsley, oregano, sage, salt, and pepper.
Sear the lamb: Heat olive oil in a large Dutch oven or heavy oven-safe skillet over medium heat. Sear the chops for 2 to 3 minutes per side until a rich, golden crust forms. Remove and set aside.
Build the smothered base: In the same pan, sauté the onions, peppers, and garlic until soft and fragrant, about 8 to 10 minutes. Return the lamb to the pan, add water, cover tightly, and let everything simmer together for a few minutes. Transfer to a 400°F oven and bake covered for about 1½ hours, until tender.
Make the mashed potatoes: While the lamb cooks, boil the potatoes in salted water until fork-tender. Drain well, transfer to a stand mixer, and whip with cream, butter, and salt until silky smooth, adjusting with extra butter or milk if needed.
Roast the asparagus: Preheat the oven to 400°F. Trim the asparagus ends and arrange them on a parchment-lined sheet pan. Drizzle with olive oil, season with salt and pepper, and scatter the garlic over the top. Roast for 18 to 20 minutes until tender with lightly caramelized tips.
To Plate
Spoon mashed potatoes onto each plate, top with lamb chops, smothered vegetables, and pan sauce. Serve with garlic roasted asparagus and a warm cheddar biscuit on the side.
Tips from Mama Niquey’s Kitchen
Searing adds a deep flavor and crust.
The onions and peppers create a naturally rich sauce.
This recipe also works with lamb shanks; just extend the bake time until fork-tender.
